Tower of Fries

Build higher and higher with a tower made of fries!

How To Make This Recipe

Ingredients

For hummus:

  • 14 ounces can chickpeas
  • 2 tablespoons tahini paste
  • 1/4 cup water
  • 2 cloves garlic
  • 2 tablespoons lemon juice       
  • 1 tablespoon extra virgin olive oil

For fries:

  • 4 large potatoes, washed
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric

Instructions

To make the hummus:

  1. Drain and rinse chickpeas.
  2. In a food processor, puree chickpeas, tahini, water and garlic until it forms a paste.
  3. Add remaining ingredients and process until smooth and creamy. 
  4. Add more water if necessary. Taste and adjust seasoning if necessary.

To make the fries and tower:

  1. Line a large oven tray with parchment paper.
  2. Cut potatoes into half-inch-thick chips.
  3. In a large bowl, combine olive oil, ground cumin, coriander and turmeric.
  4. Add potatoes, tossing to evenly coat.
  5. Arrange potato chips on the prepared oven tray.
  6. Bake at 400 degrees Fahrenheit for 30 minutes or until chips are cooked through and golden.
  7. Allow potato chips to cool on countertop before building into a tower.
  8. Spread fries with hummus to "cement" together and build into a tower.
