• 1 tablespoon butter
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1/4 cup all-purpose flour
  • 1 green pepper, diced (reserve 2 small circles for octopus’ eyes)
  • 1 can evaporated milk
  • 1/2 cup unsweetened apple juice.
  • 1 cup grated mozzarella
  • 1 red pepper for decorating
  • Vegetables, cut into sticks for serving (e.g. carrots, celery) 
  • Saucepan
  • Large mixing bowl
  1. In a saucepan, melt butter and fry onion and green pepper until tender.
  2. Add flour and continue to cook until the mixture becomes grainy.
  3. Remove from heat, add evaporated milk and juice. Stir until smooth.
  4. Return to heat and stir until mixture boils.
  5. Add cheese and stir until smooth.
  6. Pour into a serving bowl.
  7. Cut the red pepper to resemble an octopus and position on the cheese dip.
