• 4 cups French vanilla ice cream or frozen yogurt
  • 1 cup canned pumpkin pie mix
  • 5 whole graham crackers broken up into bite sized pieces
  • 3 tablespoons graham cracker crumbs
  • 1 1/2 cups mini marshmallows
  • Butterscotch sundae topping
  • Mint leaves (for pumpkin stems)
  • Chocolate bar or candy bits (if creating jack o' lantern faces)
  • 1/2 cup white chocolate chips (optional)

  • Food processor or blender
  • Ice cream scoop

  1. Soften ice cream and measure into food processor. Add pumpkin pie mix and blend.
  2. Transfer to mixing bowl and stir in graham cracker bits, marshmallows, and white chocolate chips.
  3. Cover, and freeze overnight.
  4. After 3 hours, while ice cream is still a little soft, use a mixing spoon to mix ice cream from the bottom as the white chocolate will sink and should be redistributed through the ice cream.
  5. After ice cream is solid, prepare garnish.
  6. Cut sprigs of mint leaves for your pumpkins' stems and break apart chocolate bar into pieces for your jack o' lantern faces.
  7. Set out baking cups on serving dishes and scoop big round balls of your ice cream into the cups.
  8. Top each pumpkin with 1 teaspoon of butterscotch topping sprinkled with graham cracker crumbs.
  9. Make stems by adding a piece of broken graham cracker and mint leaves. Add jack o' lantern faces with chocolate or candy bits if desired.
  10. A pumpkin patch makes a sweet fall treat when you place several of these on a serving dish together!
